Fried Brinjal Curry
1. Brinjal cut into pieces 2cups.
2 .Coconut grated 1/2 cup.
3. Turmeric powder 1/2 tsp
4. Red chilles to taste
5. Curd (yogurt) or sour butter milk 1/2 cup.
6. Oil to fry.
7. Salt to taste
8. For seasoning-mustad, jeera and curry leaves.
Deep fry brinjal. Keep aside. Grind 2 to 5 ingredients to a smooth paste. Add salt to this paste and bring to boil on a low fire as there is chance to curdle .Take off from fire and season with mustad,jeera and curry leaves. Add fried brinjal and serve with rice or chappathy.
Healthy Leafy Dosa
1. Raw rice 1cup
2. Coconut grated 1/2 cup
3 . Red chillies to taste
4. Turmeric powder 1tsp
5. Tamarind to taste
6. Asafotida 1/2 tsp
7. Salt to taste
8. Cooked rice 2Tb optional)
9. Chopped corriander leaves 1 cup (can substitute with drumstick leaves, methy leaves ,Palak or cabbage)
Soak rice for 4 to 5 hours. Gind with all the ingredients from 2-8 to a smooth batter.Keep the batter for 4 hours.(if keeping for more hours or overnight keep in the refregerator ). Add the chopped leaves.
.Make dosa with or without oil. Have it with your favourite chutny or pickle.

Moong and banana curry
You need
1.Moong 1/2cup
2.Raw banana 1
3.coconut grated 1/2 cup
4.red chillies to taste
5.turmeric powder 1tsp
6.tamarind or kodam puli to taste
7.salt
For seasoning-oil,mustad,urad dhal and curry leaves.

Procedure
Cook moong with enough water in a pressure cooker. In this add banana pieces and cook well with salt and tamarind or kodam puli.Grind coconut,chillies and turmeric to a smooth paste . Add the masala to the cooked moong and banana. Season with mustad,urad dhal and curry leaves.Healthy,tasty protein/fibre curry is ready to serve with rice or chapathy.
